Scraper Hendi 659007
Technical data 01 / 02
This confectionery scraper has a flexible silicone blade for working pastry mixtures and clearing residue from the sides of a bowl. The flexible edge follows curved surfaces, helping collect mixture that would otherwise remain around the bowl during preparation.
Where it is used
Use it to handle dough, smooth cream, divide confectionery mixtures or gather ingredients from a work surface. In a bakery, these tasks can be carried out with one utensil as preparation moves from combining ingredients to portioning a mixture. At a café pastry station, the scraper can also be used to smooth cream as part of finishing work.
The temperature range covers chilled mixtures and warm confectionery ingredients, making the scraper suitable for preparation involving both cold and warm food. This is useful when pastry work moves between a chilled mixture and a warm ingredient, without changing to a different scraper for that temperature range.
Care
The PA handle and silicone blade are dishwasher-washable, so the scraper can be cleaned in a machine after work with dough, cream or icing. That gives the utensil a straightforward route back through the wash-up between preparation tasks. Silicone’s flexibility also helps remove mixture from curved bowl sides while working, reducing residue left in the vessel before cleaning.
How to choose
The scraper’s overall dimensions define its footprint for comparison with the utensils kept at a pastry station. This helps assess whether it can be stored alongside the tools used for daily preparation without relying on a separate utensil for each mixture-handling task. Its flexible silicone blade is suited to scraping curved vessel sides as well as moving mixtures across a work surface.
The temperature range is relevant where a station handles chilled mixtures as well as warm confectionery ingredients. It allows the same scraper to be considered for both types of preparation, while the silicone blade’s flexibility supports gathering mixture from a bowl before transferring it to the next stage of work.
