Hendi Sous-vide circulators

Hendi Sous-vide circulators. Hendi catalogue from SIA La RONDE

3 Products / Hendi

Sous-vide circulators support controlled water-bath cooking of sealed ingredients, helping professional kitchens organise preparation for service. SIA La RONDE’s range includes a circulator, an insulated container and floating insulation balls. Each has a distinct role: heating and circulating the bath, providing a vessel, or covering the water surface. Choose the combination around the batch and cooking workflow.

Equipment and tasks

The sous-vide circulator heats and circulates bath water for bagged ingredients. Its timer helps staff organise cooking periods for preparations made ahead or batches planned during service production. The visible water-level marks provide a filling reference before operation. After the cook, bags can be removed for finishing or service according to the kitchen’s recipe and workflow.

The insulated GN 1/1 container for a SmartVide circulator offers a dedicated vessel for the bath, with a capacity of 28 L. This helps the team assess available water volume against the intended load. Insulation balls serve a different task: they help keep sous-vide bags beneath the water while reducing evaporation, splashing and heat loss. Consider the vessel, circulator and surface layer as separate parts of the setup.

Parameters in use

The circulator’s 1.2 kW power rating informs planning for heating bath water. Its operating temperature range of 5–90 °C allows staff to select a setting within those limits for the preparation. The control adjusts in 0.1 °C intervals, so the chosen temperature can be fine-tuned in small steps. This is useful when a recipe calls for close control rather than a broad temperature adjustment.

The timer covers periods from 5 minutes to 99 hours 59 minutes, with one-minute intervals, helping teams track both short and extended cooks. Before use, staff can compare the water level with the circulator’s minimum and maximum marks as a direct filling check. The balls are polypropylene and can be used at temperatures up to 110 °C. Their 20 mm diameter describes the individual pieces, which form a floating cover layer.

Choosing a product

Begin with the intended batch and the vessel needed for the water bath. The insulated container measures 335 × 600 × 288 mm, giving staff dimensions to consider when planning placement and handling. The circulator measures 70 × 120 × 330 mm, useful when assessing its position alongside the chosen vessel. The container’s lid is sold separately, so account for that when assembling the setup.

For the circulator, its 230 V supply and 1.2 kW rating are relevant when checking the electrical provision for the work area. The PPO body forms the housing, while the heating element is stainless steel, a material commonly valued for corrosion resistance and straightforward cleaning. Choose equipment according to the required bath volume, preparation temperature and production routine. The balls are supplied as a 500-piece pack for covering the water surface during cooking.
