Sushi preparation moves from cooking and seasoning rice to rolling and maintaining the board. SIA La RONDE’s sushi accessories include Hangiri mixing bowls, Makisu mats, a cutting-board scraper and rice cookers for these connected kitchen tasks. Choosing equipment by function helps teams organise rice preparation, shaping and clean-down around their working method.

Equipment and tasks

Use a Hangiri to fold seasoning through cooked rice. The rice’s warmth helps vinegar absorb, supporting the texture associated with traditional sushi rice. The polymer surface resists rice sticking, making it easier to mix and clean. The bowls are lightweight and durable, with a sturdy rim for repeated handling. They can be stacked between preparation runs and are suitable for dishwasher cleaning.

Makisu mats provide a surface for rolling sushi; their easy-rolling action supports repeated shaping without additional foil. Made from polypropylene, they have antibacterial properties and can be washed in a dishwasher. For board upkeep, the Hasegawa scraper cleans, levels and polishes. Moisten the cutting-board surface before use. The scraper is intended for Hasegawa and HENDI HACCP cutting boards, helping maintain their preparation surface as part of routine hygiene work.

Parameters in use

The Hangiri with a diameter of 480 mm has a broad, shallow profile for folding seasoning through rice. The other bowl has a larger mixing area, useful when more room is needed to turn rice. Its maximum temperature resistance is 90°C, a practical upper heat limit when handling the bowl around warm rice. Dishwasher suitability supports clean-down after mixing.

The Makisu mats have different footprints, allowing staff to choose the support area needed for their rolling method. Both have a maximum temperature resistance of 100°C, a useful limit to bear in mind during handling and cleaning. The rice cookers have cooking and keep-warm modes; warming switches on after cooking. Their non-stick inner pans help with rice removal and cleaning. The smaller cooker can also thermally process fruit, seafood and eggs.

Choosing a product

Match a Hangiri’s mixing area to the amount of rice being seasoned and the space available for folding. Choose a Makisu according to the support area the team needs for shaping rolls. For board care, the scraper is a task-specific option for the intended Hasegawa and HENDI HACCP boards; moisten the surface before use. Together, these choices organise the hands-on stages from seasoning to shaping and surface upkeep.

For batch cooking, select between the rice cookers’ capacities: one holds 4.2 L and the other 10 L. The automatic transition to keep-warm mode helps keep cooked rice ready for the next preparation step. The larger cooker’s 2.9 kW rating is relevant when assessing the electrical load for its work area. A cooker, Hangiri and Makisu support a progression from cooked rice to formed sushi, with the scraper available for board maintenance.
